What if Obi Wan did capture Jango Fett and took him to the Jedi Council?

I could then still see Boba hiring other bounty hunters to help him break his father out, which could've opened the door to a lot of new possibilities.

Dooku told Jango that the Clones would later help end the Jedi... The Council could have somehow got that out of him, and learned this all, they would be more careful around the Clones, and when Order 66 finally came, the Jedi loses would be minimal, seeing has how a majority of Jedi would have stuck to traditional soldiers instead. After Sidous dispatchs the C.I.S. leaders, the massive amount of surviving Jedi and there armies of traditional soldiers would take for C.IS. facilities, backed by any of their allies. This would leave the Clone Wars still going, the Rebellion would be built among the droids and the Jedi.
The Jedi would have double the force that the Rebellion had leading up to 0 ABY, the Empire would be more pressed and would easily be segregated. The Kamino facilities would shift against the Empire like they planned too do anyway, and the Jedi Rebellion would defend them with Post-Republic and CIS ships and soldiers. So then, the New Clones would be defended and owned by the Jedi Rebellion leading up to 0 ABY. Having probably gaining more planets and governments to their aid, the Jedi and the Empire would be evenly matched, and possibly would have stooped Death Star construction, and took over Kuat Shipyards, halting Imperial Star Destroyers, and taking all of Kuat's plans, making them build them for the already early made New Republic.
As droids, clones, and loyal soldiers began shooting out for the New Republic, more and more planets would shift or become part of the New Republic by the supposed time of the Battle of Hoth(Which probably would have not happened). The Empire would be segregated and easily hunted, until the Jedi finally cornered Sidous, and from the outcome of that battle, as long with all the other battles, will forever remain a mystery.
